New Mobiles + "St. Lemon"

My hubby came up with a new favorite drink this weekend. I'll call it the "St. Lemon" for now:


1 part lemon vodka
1 part St. Germaine
2 parts club soda
Squeeze of fresh lime


Perfect for summer entertaining, or relaxing in a newly manicured backyard - I love days like today. Did any of you try the Creamsicle?

{Still working on getting that dirt for my dream veggie garden. We'll get there... Maybe when it's time for pumpkins.}

Mediterranean Chicken Quickie

As I sit hear enjoying my favorite leftovers, I realize that I haven't shared one of my {and my husband's} favorite recipes with you! This recipe was passed down to me through my mom and originated with one of her friends.


Mediterranean Chicken

1) Preheat oven to 350F
2) Add olive oil to large saucepan and heat to medium-high.
3) Slice boneless, skinless chicken breasts into 2"-square pieces, roughly.
4) Place chicken pieces in bowl of breadcrumbs and toss to coat.
5) Brown the chicken pieces {about 2 min per side} and place in a large Pyrex dish.
6) Once all pieces have been browned, toss in cherry tomatoes, capers and pitted black olives {as many as you'd like of each - I usually omit the olives as I'm not a fan of olives; sometimes we go crazy with the tomatoes and that's our veggie intake for dinner}.
7) Sprinkle with olive oil, and toss.
8) Bake for 12 min or until chicken pieces are fully cooked and tomatoes have softened.

We usually serve with a salad and brown rice however I forgot to make the rice last night so we had whole-grain Rotini pasta instead.

Kids love it. Makes great leftovers. One of my favorites.

An Inspirational Room

About a month ago I made this fun, custom mobile that I forgot to blog about...


Well, I just got a sweet email from the mama that received this mobile and she included some fun pics and notes. She wrote:

"So for those of you who don't know, i came back from our family beach trip to a HUGE suprise in the nursery!!!  Jimmy had Leigh Watson (from Highland Park, now lives in Austin and paints nursery murals for a living) come and paint a mural in our nursery - he had her work off of the mobile (my favorite part of the nursery) and my picture - she did amazing work!  I absolutely love it and probably wouldn't have had the guts to do it myself...he's a good man with great taste :o)

I'm honored that my work was the inspiration of another artist's work. What talents she has! I love how she pulled the patterns for the animals from the fabric in the mobile. So neat.

So now you know who to call if you want an incredible mural on your wall, or a sweet mobile. :)

My Happy Place: The Cabin

We are blessed to be able to continue a family tradition to a second generation by traveling to our mountain cabin, "The Lake House", each year. We were just up there recently and I just have to share some of the photos as it's my ultimate "happy place".


My husband grew up coming to this lake with his family and family friends with whom we still share the cabin. {I grew up going to a similar lake so I totally get the magical beautiful and peace that comes in such a simple form.}

It is tremendously special to do with our kids what my husband and I both did growing up - canoeing, hiking...
